I am sharing with you one of my go to’s for meal prep. Spaghetti squash with turkey meatballs.
I typically make baked spaghetti squash on Sundays plus a ton of meatballs to pair with veggies. It’s such an easy way to make 4 days worth of lunches in about 45 minutes!

This recipe couldn’t be easier.
While the spaghetti squash bakes in the oven with a drizzle of olive oil and s&p, mix together the ground turkey with some seasoning ( I LOVE Primal Palate’s Amore!) plus almond flour, and an egg.
Then it’s only a few minutes of the meatballs sizzling to doneness then assemble in meal prep containers!

Now you are all set for Monday-Thursday!
I typically do a mid-week mini prep to keep things fresh for Thursday/Friday. Because I just can’t do 4 day old turkey or chicken!
